Downtown's Pyramid debuts chef's tasting room

The Pyramid restaurant in downtown's Fairmont Hotel has opened a chef's tasting room showcasing the cuisine of executive chef JW Foster. The elegant room can seat 20 for a personalized custom menu of up to nine courses, plus wine pairings selected by sommelier Hunter Hammett.

I was lucky enough to check it out earlier this week, and much of the seven-course tasting menu blew me away, including a luscious duck confit, black currant and pecan ravioli served atop five-spiced pear jam; salmon carpaccio with ribbons of shaved fennel and huckleberry-stone mustard vinaigrette; and a rhubarb sorbet scented with oranges and honey that was, perhaps, the meal's showstopper.

  • Click the "OK" button to exit the Internet Options window.
  • Refresh the page.

Did you have to pay for that meal?


Both Kims were there (me, too). I was also impressed with JW's commitment to sourcing ingredients within Texas, where possible. Plus, he is expanding the Fairmont's rooftop garden from 2,000 square feet to 3,000 square feet with a plan that includes adding honey bees. Nice use of space, don't you think?

I was also impressed with Hammett's wine selections, which were fun and adventurous, including a confounding 2005 organic Domaine Richeaume, Cuvee Traditions, from Provence that blended grenache and cabernet sauvignon. Fruit so big, wine so lean - and a perfect match to the venison chop.
