That's a question we've spent considerable time researching and pondering for ourselves the last few weeks, and we're sure you'll have plenty to say about who we've included in our critics' picks and who we haven't.

For us, the criteria for an outstanding burger were simple: Did the essential taste of the burger patty impress us, and did the ingredients around it reveal quality and balance? Know that, in trying the slew of sacred cows in the local burger business, we started by sampling a basic burger, but we also didn't consider ourselves purists. Bacon, cheese beyond the standard processed American variety and, occasionally, even controversial toppings like guacamole were not only acceptable but also sometimes preferred.
Also (and I know we don't really need to make this disclaimer in Texas), this is about beef burgers. Turkey and veggie burgers occupy other realms altogether.
Here are our favorites:
Angry Dog
A shining example of an all-around impressively juicy half-pound burger made of freshly ground, spiritedly seasoned meat that satisfies whether austerely dressed or loaded with toppings. It's a burger you don't overanalyze: You just grip with two hands and snarf. The scruffy but welcoming bar atmosphere and killer selection of beers only augments the burger's mystique.
Fred's Cafe, Fort Worth
If you're taking visitors to the amazing Fort Worth museums, take them by this eye-popping bit of funky Cowtown for lunch first. The gold vinyl booths, the walls plastered with neon bar signs and layers of posters and flyers ... and are those really antlers covering the ceiling in the back alcove? The not-too-dense, not-too-slack Fredburgers are made from Texas raised ground beef. Our favorite variation: The Diablo Burger, festooned with chipotles, grilled onions and melted Swiss in addition to the classic pickles, lettuce (nice and crisp!), tomato and mustard. Incredible hand-cut fries to boot.
Kelly's Eastside, Plano
Kelly's makes a mean half-pounder, but for those of you who adore the thin patties, we didn't find a better version than on the Trio Burger: three 1/6-pound patties are stacked with cheddar, Swiss and pepper jack cheeses. Despite all that fromage, the smoky, almost caramelized taste imparted to the meat from the kitchen's wood-burning grill came through in every bite.
Love Shack, Fort Worth
Celebrity chef Tim Love outdid himself when he constructed his bawdy "Dirty Love burger" (and while you're at it, opt for the double meat): Two medium-thick patties, made from a combination of ground tenderloin and brisket, are deluged with tomato slices, shredded lettuce, bacon, two squares of melted American cheese, pickles, a fried quail egg and a spicy, tangy mayonnaise relish appropriately dubbed "love sauce." Local bread company Mrs Baird's supplies the soft, not-too-thick buns. Dallasites unwilling to burn the expensive gasoline to grapple this lusty beast are in luck: A Love Shack outpost will soon open in Victory Park.
Perry's
Consider Perry's the upscale underdog on this list: Among the numerous expense-account burgers we've recently devoured, this $16 lunchtime-only entrant made of prime aged beef most dazzled us with how not leaden it was for a chili burger (to which we added cheddar). The leaf of butter lettuce spread over the top bun was pristine. And among such old-school refinement, it would be more than acceptable to eat this baby with a knife and fork. Magnificently crisp potato wedge fries, too.
Snuffer's
The Dallas native among our circle of critics identifies herself as a "Snuffer's girl." This is where she's gone for years when she craves a classic sesame bun-packaged half-pounder of ground chuck. (We will admit, among this group, we lean toward the thicker, rather than thinner, patties when it comes to burgers.) Running with tradition, we've got to have an order of cheese fries on the side.
Twisted Root
Jason Boso and Quincy Hart rock the chef-driven burger concept with this rebellious Deep Ellum joint (look for a second location opening in Richardson's Eastside Centre development at Central Expressway and Campbell Road). The hand-pressed, flattish-but-wide patties create a level playing field for a far-flung range of toppings. A current favorite combo: green chile, guac and pepper jack. We know we said this is a beef-only discussion, but if you like buffalo burgers, plant yourself at a table here.
Wingfield's
When we reached into our to-go bag to retrieve our burger, we thought the folks behind the counter at Wingfield's had mistakenly given us a double bacon cheeseburger instead of a single. But, no: The burger is that tall, an architecturally constructed masterwork featuring brazenly well-seasoned meat and thick bacon reminiscent of Smithfield ham. Man, this is a standout burger. And, even with previous raves from another pub, it may still be the best-kept burger secret in Dallas. This tiny Oak Cliff business does take-out only, and regulars know to call ahead for their order. However you approach it, seriously, go try this burger today.

Burger lovers at the Galleria should check out the new 5 Guys burger restaurant next to the ice rink on the lower level too. A great, old fashioned burger with tons of optional toppings, very meaty and great texture. The fries are the kind of fries you USED to get at the fair, perfectly fried, not too crisp and not too soggy.

I'm disappointed to see Wingfield's on the list, but I'm glad Who's Who didn't make the cut. I used to go there, but the rude manager, burnt (and expensive) hamburgers, and undercooked bacon were too much for my delicate psyche.

Twisted Root in Deep Ellum.
I love the atmosphere, the funny names you are assigned when your order is called, and the burger, obviously. Big, a little greasy, and the choices of sides are better than your typical fries.
But I also must play the part of cheerleader, and advise that, if you ever venture to New Orelans, your first stop in the Quarter must be Port O' Call on Esplanade. Best burger I have ever had. Served open-faced with a LOADED baked potato. And the atmosphere is just perfect, feels like a dive right off the wharf. And have a monsoon to chase it with. Your buzz as you walk the Quarter will be pitch-perfect.

New Place...most of you have probably not been there yet...but I have to throw this in.
The Second Floor Bistro at the Westin Galleria. Homestyle burger with gruyere cheese. Perfectly cooked on a fresh bun. Or the "second floor blue burger" with grilled onions, blue cheese and pancetta. I know..sounds fancy and expensive...but it's really not. $11 or $12 includes a salad and a heap of fries seasoned with rosemary. Seriously good.
Oh..and this place is run/conceptualized by the Gottlich's of Bijoux...so it's quality. :)

Y'all are missing the boat. What about all the old school joints.. Burger House, Club Schmitz, Loon, Uptown B&G, Lakewood Landing, Adair's, Angry Dog, Keller's/Jakes, Dunston's, & Whole in the Wall? No Diners either, The Mecca, The Surrey, Mama's Daughter, etc. Kinkaids and Al's in Tarrant County and Frostie's in Denton...Must be all transplants.

Totally agree on Angry Dog, Keller's, Twisted Root, and Lakewood Landing.
I do want to add a few more to the list: Hector's on Henderson (Kobe beef with Wisconsin cheddar), The Porch (big, juicy and has that slight charred flavor), and Uptown Bar & Grill (Dallas classic).
For those extolling Mooyah, it's just another chain like In-n-Out. Decent burger, but I'd never say it was the best quality. A real burger needs 2 hands to eat.

I have to vote for Burger House, my family goes to the one on Marsh Lane in Farmers Branch. My favorite is a double/double (double meat, double cheese burger). I have been a long time fan of Snuffer's but now I think Burger House is the best burger in Dallas.

Angry Dog has the "juicy burger" catagory won in spades (flavor is fantastic.) I literally wonder if the people patronizing Twisted Root have ever tried the Dog. Plus the atmosphere, fantastic wait staff and willingness to let you drink unmolested right through the lunch-time throng... My little heart goes pitter-patter.

Kincaids in Fort Worth has been doing it right much longer than any place in the metroplex! I guess being voted the "Best Burger in the US" by USA Today is all but forgotten. Don't be fooled by the one in Southlake, it's not as good as the original on Camp Bowie in FTW.

If you really like them thick try one of the "Point" bar/restaruants or "1st and Ten" on Mockingbird @ Abrams. They are 3/4 pounders!

Potco is right! Coppell Deli has long been overlooked for its high quality, plump burgers. Sure, the place has the atmosphere of a 7-11 owned by Cowboys fans but the burgers are off the charts.
I know Dallas folks LOVE to eat at places to see and be seen at, but when it comes to a good burger nothing beats Coppell Deli.

Try JG's Hamburgers on Greenville Ave. just west of 635. Delicious, old-fashioned juicy, greasy hamburgers on toasted buns. You add your own fixins, which are always fresh. French fries are cooked just right -- not too soggy or too crunchy.

I love all the places being mentioned....Snuffer's, Jake's, Angry Dog, Burger House.....I won't say it deserves to be mentioned with these greats, but Bone Daddy's makes a mean cheeseburger. Try it out, and of course, enjoy the scenery.

Me for sure! Just ask my friends and family who won't order burgers at restaurants as they say I've ruined them. Start with fresh ground chuck (ground that day, never frozen) and season as you will. Please just don't over work and over compress the meat and never flatten it out on the grill. Grill on a medium hot grill to a nice medium rare, rest it 5 mintues and you'll be at a perfect medium.
To Ryan who put Fat Daddy's on the list...COME ON. You are entitled to your opinion but they seriously overwork, over press and over cook the meat to the point that it the meat is tough and dry. Not worthy of consideration as a best burger, but they do have great salads and are super nice folks. Still, if you call yourself Fat Daddy's, you'd better know how to cook a fat burger!

If I'm looking for a straight up burger, I go to Balls. They have the best tasting meat that I've had in town and they don't season the meat too much...just pure meaty goodness.
Bailey's 1st and 10 is a very close second. I just discovered them a couple of months ago and their burger is superb

Ditto others here on the omission of Kinkaid's, Lakewood Landing, and The Uptown Bar & Grill. Those all offer some of the best burgers available in the DFW metroplex.

THE BEST
Hole in the Wall - simple, delicious; so good they melt in your mouth
Jake's - poppy seeds not my thing, but otherwise... double patty beefy, cheesy goodness
Red's Patio Grill / Strong's Tavern - delicious
Montana Legend beef; expertly dressed
Twisted Root - large and juicy; great specialty burgers
Mooyah - messy, juicy and tasty; dressed to your liking; they are a local and small start-up chain, so I'm not sure why that would be considered knock on them; nothing at all like In-and-Out Burger
Uptown Bar and Grill - remember the burger being very good, but it's been a while, so I can't really talk specifics
Angry Dog - ditto
THE REST
Burger House - Spent years going to the SMU location every week; it's good, but not the best by a long shot; fries are killer
Scotty P's - decent burger, but won't knock your socks off
Chip's - messy, large; hit-or-miss; some have been great, others not so much
Snuffer's - I've tried very hard to keep liking them over the years, but the last five times I've been, the burgers were horribly over- or under-cooked and just don't seem to have much flavor
Having said all that... the only place mentioned where I've really been hugely disappointed in a burger is obviously Snuffer's - repeatedly so.
I haven't tried Keller's, Lakewood Landing or Adair's, but after reading the other comments I can't wait to do so. Thanks for the info!

The Stoneleigh P's burger called The Shrop is extremely good. Fresh spinach, a bacon & onion compote, tangy mayo and ground beef on a ciabatta bun. Add in a cup of their lentil soup on the side and you've got yourself one delicious meal.

Angry Dog in Deep Ellum is awesome. When I lived in downtown across from the Farmers Market, Angry Dog was a frequent stop. Not only is the burger great but so it the tuna steak sandwhich.

Sorry, but Mooyah's overly doughy buns greatly detract from the burger. They aren't even a contender in town. Plus they ruined a perfectly good Tin Star to build their Uptown location.

Charley's Old Fashioned Hamburgers
The 1950s never left this small burger hut in Southwest Fort Worth. Paint chips flake off the sign and some benches outside make this place the perfect spot for greasy burgers and sweet tea on a Friday afternoon. The specialty item on the menu is aptly named the Greatburger. Two patties of beef, countless slices of Canadian bacon, a slathering of mayonnaise and American cheese comprise the 800 Calories of mouth-watering wonder.

i dont think anyone mentioned louie's on henderson. fresh ground beef, on a toasted french roll, with spicy brown mustard. the best in town, along with the stiff drinks, makes this number one with us.

Bucks Prime on Market Center is THE BEST around! Good thick burger grilled over an open Mesquite fire. I have had burgers at almost all the places previousley listed but this one is the best!

Without a doubt my favorite is Social. A Kobe burger so juicy you need two napkins! My favorite is topped with Gruyere and Brown Mushrooms! Yum!

Really, it's worth the drive to go to MG's in Sherman. We go every Sunday during the school year at Austin College.
But, in town, it's JG's on Greenville Avenue, just south of LBJ, hands down.

I am new to this country, so I should have good input.
The burgers are quite tasty from house with big arches owned by clown - I have picture taken with clown.
Americans love Arch burgers, houses of Arch on every street - why Arch burgers not on list?
Idea of eating with Angry Dog is bad idea - your list, not so good.

You all must be guys. One of the best and been around the longest, since the 1950's is the Salad Burger at Goff's on Hillcrest. A smaller burger and the grated cheese on top is chilled, not melted. Thousand Island dressing. GREAT on a hot burger.

It is Kincaid's in Fort Worth by a mile. Nothing else is even close second. ANY list that does NOT include Kincaid's should NOT be considered legit.
My wife like JG's on Greenville, but Kincaid's is vastly superior, especially over such non-starters as Snuffer's (puhl-ese), Mooyah's or Kelly's Eastside (both overrated).
HOWEVER, no Texas burger compares to California-based In-and Out - simply the best burger of its kind in the USA. No debate.

I didn't see anyone mention Burger Island on here. Their burgers are made fresh when you order, they always have fresh buns and produce and their meat tastes fantastic. On top of all of that, their fries are real potato french fries. Good stuff!!

Mooyah would be at the top of my list if they had more choices for cheese than just American (not even a real cheese). Swiss, cheddar and pepper jack would be great options without any additional cost to the owner.

Well I'm pretty sure we have good burgers here in the DFW area, but i must say that IN n OUT Burger is by far the best burger I have ever tasted bar none!
