Chipotle Mexican Grill announced last week that it plans to buy at least a quarter of its produce this summer from local small and mid-size farms, according to Nation's Restaurant News. Local sourcing would apply to romaine lettuce, green bell peppers, jalapenos and red onions in season. "Chipotle is the first national restaurant chain that has made a conscious effort to support the local economy where their restaurants are located," said Kirk Holthouse, whose Holthouse Farms in Willard, Ohio, will provide peppers and lettuce to outlets in Indiana, Kentucky, Michigan, Ohio and Pennsylvania, according to the NRN dispatch.
This, from a chain that already sources its pork and chicken from farms that raise them humanely (Niman Ranch for the pork) and 60 percent of its beef. And it uses organic beans, avocados and herbs. You can read NRN's story here. And by the way, while McDonald's was an investor in Chipotle for eight years, Chipotle is completely McDonald's-free today. A shoutout to founder and chief honcho Steve Ells for showing with his Boulder-based company that sourcing local, among other sustainable and animal-friendly moves, can be done on a large scale. |
