Thoughts on the best local butcher shop?

This is a question of personal interest. I'm cooking dinner for a friend's birthday this weekend, and am debating between the beef brisket or the leg of lamb recipe from Suzanne Goin's Sunday Suppers at Lucques (a jones for California cooking lingers after my recent jaunt to LA, when I ate at Goin's restaurant).

Admittedly, I don't spend much time in the kitchen these days, so I need some guidance in the meat department: Are there any stand-out butcher shops in the Dallas area? Guessing that Jimmy's is one obvious option ...

I'd give Rudolphs a try, they're in Deep Ellum. I'm not sure how they know, but they already tell me what I'm going to order before I have a chance to open my mouth.

Yes, Rudolph's is great, if you go be sure and pick up some of their homemade chili and italian sausage for yourself for later....

Kuby's is another good choice - ditto for their smoked ribs....

I've heard of Rudolphs, Hirch's in Plano. I go to Hamm's in McKinney. Not only do I love their meat, I love the owners as well. If you need a special cut or special order, they will oblige. I was raised on their meat, and now I do business there. If I had to host a dinner where I needed prepare steak or any other type of beef, chili, chicken, pork, Hamm's would be my natural choice. They're on the square located on Tennessee street.


Hirsch's In Plano. Hands down the best butcher shop in the area. Great owners, Great employees. Danny behind the counter will bend over backwards to make sure you are happy. Make sure you try some of the sausages all shop made.


Rudolph's for sure. They even had hangar steaks when I was on a quest to try them this past weekend. They sell their hot dogs old school, all on a string. And they have big slabs of bacon that you can get cut whole or slices off of.


I believe you can order the same cuts the top restaurants in Dallas get...

By far, the best butcher shop is Old Town Market in Lewisville. My husband and I shopped at Rudolph's for years, but once we discovered Old Town Market, we never went back to Rudolph's. The meat is much better and the prices are slightly better! Also, the shop was featured on one of Bobby Flay's FoodTV programs in the past couple of years as being a great place to buy meat. Get the bone-in ribeye cut thick - delicious!


We've begun shopping almost exclusively for our meats at Zituna in Richardson. The quality is extremely high and the prices are very friendly to our budget.


Don't forget David's Meat Mrket in Garland. Good prices and great meat.


David's has a much better price point. But, nothing can touch Rudolph's as far as I'm concerned. Go. You won't regret it.


I'm with the Rudolph's fans! The meat is consistently awesome. Some markets don't sell aged meat; Rudolph's does. Their meat is worth the little more I pay.


The best lamb, bar none, is New Zealand lamb and it can be found at any Sam's Club. Either the Frenched racks or the boneless, tied legs are excellent. Colorado or Aussie does not even come close.


Granted, you will pay for it, but Rudolph's hands down has the best meat in town. They've been around since 1895 (that's not a typo), and put out better quality steaks than most of the steak houses in town. Their sausages are wonderful, and the service is good as well. You can't go wrong with this place, and if you have a dog, ask for dog bones, which they will cut right there for you--your dog will definitely appreciate it.

Do any of the Mexican or Mid-East (often 'Halal') markets have good quality meats? Just curious.


What about a good seafood market? I've heard Rex's on Lovers Lane is good, any thoughts or suggestions?


As for the Mexican meat markets, la Michoacana has stores all over the metro and is a great deal on fajitas marinadas. Much better than paying $4.99 for skirt steak at the supermarkets.


Don't tell anyone, but I heard that the Mid-eastern grocery on the north-west corner of coit and spring creek in plano has AMAZING lamb chops for about 5 bucks a pound...shhhhhhhhh!


I'm going to admit by price and proximity are big factors for me. I don't want to drive more than 10 or 15 minutes. If Central Market is having whole chickens for 99 cents a pound like they have recently, then I'm buying that. If I'm going for brisket, I usually get the big, untrimmed, cryovac package, so it's all pretty much the same around town. Fiesta has excellent prices on brisket, pork shoulder, etc. If it goes in the smoker, we usually get it from Fiesta. If I'm going for a nicer cut of beef or lamb, etc., I generally go to Kuby's.
