Catch a Rising Star chef

I spent most of Monday holed up at Milestone Culinary Arts center helping choose this year's Rising Star Chefs. The contestants had to prepare a dish to pair with either Merryvale Starmont 2006 Chardonnay or Merryvale Starmont 2005 Cabernet Sauvignon.
And the winners are:
White wine
First: Lan Nickens, executive chef, Chamberlain's Steak & Chop House, for Seared Scallop and Wild Mushroom Ragout with a Sweet Corn Souffle.
Second: Omar Flores, Roundsman, Abacus, for Curry Seared Diver Sea Scallops with Toasted Israeli Couscous.
Red wine
First: Jeremy Neilson, executive chef, Neiman Marcus NorthPark, for Juniper Berry Rubbed Buffalo Tenderloin with Applewood Smoked Bacon and Blue Corn Waffle with Ancho Guava Reduction.
Second: Christopher Alford, Sous Chef, 62 Main, for Seared Rack of Lamb with Sweet Corn Quinoa, Vinagre de Jerez Splashed Swiss Chard and Blueberry Gastrique.
If this all sounds good, sign up for the awards dinner on April 24 at the Rosewood Mansion on Turtle Creek. All four dishes will be served, along with dessert from the Mansion kitchen. Price is $100, and it's always a sellout.
The competition is part of the Dallas Wine and Food Festival, which opens on April 23 with Gourmet Cinema at the Dallas Angelika.
