While there, I found out that the vertical tasting of the winery's big, voluptuous Elivette Bordeaux blend has been rescheduled at The Rosewood Mansion Restaurant. Mark May 3 at 7 p.m. on your calendars. Spring Mountain winemaker Jac Cole and Mansion sommelier Michael Flynn will lead the tasting with a five-course menu developed by executive chef John Tesar. There's also a price break this time around: It's $175 a person plus tax and gratuity. Call 214-443-4747 for reservations. BTW, does that winery facade look familiar? It was used for the TV series Falcon Crest. The 845-acre estate is nestled into the eastern slopes and lower half of Spring Mountain with 226 acres of vines in 135 blocks. It was idyllic, with sheep and their tiny lambs grazing in a small, close-in vineyard. Now that's an organic and sustainable way to control the grass and weed growth between your vines. (There's even a service called Wooly Weeders that brings the sheep to you.) For the opening tasting, Spring Mountain provided a roomful of gorgeous John Raymond artisanal cheeses, most sourced from single herds. Favorite name: Oregonzola. Raymond & Co. Cheesemongers is a name to remember. |
