The long and winding ham

Yesterday's big Christmas dinner at a friend's house included a spiral-cut honey ham. And even though there were 11 of us gathered 'round the dining-room table, there was still plenty of ham leftover to send home for a second, third and even a fourth meal.

What to do with all that leftover ham?

This morning, I made an Eggbeater omelet (got to compensate for all the indulgence of the day before) with cheese and diced ham.

Later, for lunch, it was ham salad: chopped ham, chopped pecans and sliced celery dashed with lemon juice and mayo.

Tonight, I'll saute up ham slices in skillet to serve with leftover curried fruits, perhaps over instant brown rice with some frozen peas thrown in. That brings to mind making Chinese fried rice, but you need cold, day-old white rice to pull that off.

And when the hostess comes to the end of the spiral, I'm going to suggest that she throw the bone in a pot with some water, split peas or another friendly legume.

I'll bet that doesn't begin to tap the creative ways you can serve this holiday leftover. What do you do?

With New Years approaching next week, don't forget a pot of black eye peas. They could sure use some flavoring from that ham and some jalapenos.
